Ingredients:
2 cups of organic broccoli
4 tablespoons avocado or olive oil
2 clove garlic chopped or 3 tbsp powder
1 tablespoon paprika
2 tbsp of tahini
juice of half a lemon
1/3 cup parsley, chopped
1/3 cup sliced almonds
2 tablespoons cranberries (optional)
1/4 cup warm water
Salt & pepper
Directions:
Preheat oven to 400 F
Chop & wash broccoli
In a large bowl combine broccoli, oil, salt, pepper, 1 clove or 2 tbsp of garlic & paprika; roast for 30-35 mins
While the broccoli roasts, prepare the tahini dressing
In blender or food processor, add 2 tbsp of tahini, the juice of half a lemon, salt, pepper, garlic, parsley & warm water; blend until smooth
Mix broccoli & sliced almonds, drizzle dressing on top
Top with parsley and a few dried cranberries!
