Ingredients:
2-3 handfuls of arugula
1/2 cucumber, chopped
NTG basil avocado pesto (see below)
crumbled goat cheese
@crookedcarrot fermented cabbage
sprinkled on some:
hemp seeds (plant protein),
chia seeds (hey, omega 3s)
pumpkins seeds,
walnuts
pecans
NTG Basil Avocado Pesto
1-2 handfuls of basil
1 avocado
1/4 cup hemp seeds
1/4 cup olive oil
1/2 lemon, juiced
1 tablespoon garlic powder
1/2 teaspoon sea salt
1/2 teaspoon black pepper
Directions:
Strip basil leaves from the stems and add to a food processor along with avocado, hemp seeds, garlic, pepper salt; pulse until finely chopped.
Add oil and process to form a thick paste.
