Ingredients:
2 tbsp extra virgin olive oil
3 cloves garlic, chopped
1 onion, chopped
1 cup celery, chopped
4 carrots, chopped
1 16-oz can diced tomatoes
1 can white beans (if you have trouble with beans skip & double up on veggies)
12 cups vegetable broth
1 bunch curly green kale, stemmed & chopped
1 tsp thyme
Salt and pepper
Toppings:
1/2 avocado
2 hemp seeds
Directions:
Coat the bottom of the crockpot with oil.
Add onion, garlic, celery, and carrots, stir.
Cover and cook on med-high for about a half hour. Season with salt and pepper, and add thyme.
Add tomatoes (undrained), beans, and vegetable broth. Add kale and stir gently.
Cover and cook on low for 6 hours.
