Roasted Red Pepper Lentil Pasta

Serves 3-4

Ingredients:

  • 1 box Red Lentil Pasta

  • 1/4 cup Pumpkin Seeds

  • 1/2 cup Cashews

  • 1 tsp garlic powder

  • 2 tbsp nutritional yeast

  • 1 Red Bell Pepper (Roasted, Jar)

  • 1 tbsp Extra Virgin Olive Oil

  • Sea Salt & Black Pepper (To Taste)

  • 2 cups spinach

Directions:

  1. Cook red lentil pasta according to package instructions.

  2. In a blender add roasted red pepper, pumpkin seeds, garlic powder, cashews, olive oil, salt, and pepper. Blend to form a sauce. Add sauce to pasta.

  3. Serve 1/2-3/4 cup over spu
