Serves 3-4
Ingredients:
1 box Red Lentil Pasta
1/4 cup Pumpkin Seeds
1/2 cup Cashews
1 tsp garlic powder
2 tbsp nutritional yeast
1 Red Bell Pepper (Roasted, Jar)
1 tbsp Extra Virgin Olive Oil
Sea Salt & Black Pepper (To Taste)
2 cups spinach
Directions:
Cook red lentil pasta according to package instructions.
In a blender add roasted red pepper, pumpkin seeds, garlic powder, cashews, olive oil, salt, and pepper. Blend to form a sauce. Add sauce to pasta.
Serve 1/2-3/4 cup over spu
