Savory Roasted Sweet Potato Delight

Serves 2

Ingredients:

  • 1 large sweet potato, baked

  • 2 teaspoon cinnamon or pumpkin pie spice

  • 1/2 cup unsweetened nut milk (adjust depending on the consistency you desire - more or less)

Toppings:

  • 4 tbsp chia seeds (2 tbsp per bowl)

  • 4 tbsp hemp (2 tbsp per bowl) seeds OR 2 scoops of unflavored protein powder or collagen (20g per bowl)

  • 4 tsp almond butter (2 tsp per bowl)

  • 2-3 tsp full fat coconut milk (2 tsp per bowl)

  • 1 cup blueberries (1/2 cup per bowl)

  • More cinnamon

Directions:

  • Add all ingredients in blender & blend until smooth. If using protein or collagen, add here

Toppings:

  • To each bowl add:

  • 2 tbsp chia seeds to each bowl.

  • If you didn't use protein powder add 2 tbsp hemp seeds

  • 2 tsp almond butter

  • 1-2 tsp full fat coconut milk

  • 1/2 cup blueberries

  • More cinnamon
